Lemon Tilapia, Homemade Mashed Potatoes and Fresh Broccoli

Salaam!
I hope everyone had a fantastic Easter Sunday filled with lots of love and happiness. I had a nice Sunday and an even better meal. This simple recipe includes spicy tilapia fillets, fresh broccoli topped with shredded cheese, and homemade mashed potatoes.This recipe is easy to make and just simply delicious. Below is my step by step guide on making this scrumptious meal for yourself or for your loved ones. Enjoy!
Ingredients:
4 tilapia fillets
olive oil (optional)
butter
ground cayenne pepper
garlic powder
smoked paprika
black pepper
salt
lemon
5 potatoes
2 fresh stalks of broccoli
Sour cream
shredded Monterrey and Colby jack cheese
Almond milk (or regular milk, I chose regular 2% milk)
Spicy Tilapia Fillets

Preheat the oven to 350 degrees. Place aluminum foil onto baking pan (less clean up afterward). Spread 2 tbsp of olive oil (or butter) on the aluminum foil sheet. Rinse the tilapia fillets and place fillets on to baking sheet. Sprinkle fillets with 1/2 tbsp of ground cayenne pepper, 1/2 tbsp of garlic powder, 1/2 smoked paprika, 1/2 tbsp of black pepper, squeeze 1/2 lemon on to tilapia fillets. Rub in spices on both sides of the fillets. Top each fillets with 1 tbsp of butter. Bake for 15-20 min to cook thoroughly and to absorb the flavorful spices.
Homemade Mashed Potatoes

Boil 5 potatoes for 35 min, leave skin on (optional, or peel skin off the potatoes). Drain potatoes; add 8 oz sour cream, 1/3 cup of almond milk (or regular milk) and 1/2 stick of butter. Mash with potato masher (or fork) until smooth and creamy. Add salt and black pepper; to taste. Add more milk and butter to make an even more creamier mashed potatoes.
Fresh broccoli topped with shredded cheese

Broccoli with shredded Monterrey cheddar and Colby jack cheese. Cut 2 stalks of broccoli into florets pieces. Boil broccoli in pot for 20 min. Season broccoli with 1/2 tbsp of garlic powder, 1/2 tbsp of salt, 1/2 tbsp of black pepper. Drain broccoli of water; leave a few tbsp of water in the pot (so the broccoli does not dry out). Add 1/3 cup of cheese and mix together.
All done and ready to eat!

This meal calls for easy preparation and even faster clean up time. My beverage to compliment my meal is a cup of hot Lipton tea with added honey, sugar and lemon slice.
Food Tip: If a recipe calls for a lot of spices, try buying fresh vegetables and spices to add a natural taste to your meal. For example, I used garlic powder in this meal, to add a more natural taste use fresh garlic. I also used fresh broccoli florets instead of the frozen bag broccoli florets, this adds more nutrients and gives the meal a different quality of flavor.
