Buenos dias a todos!
… the flavorful aroma, the spices, the taste. So delicious! I found this recipe online when I was searching for beef stew recipes. I came past the Beef Masala Curry. Unfortunately, I couldn’t find the Garam Masala spice in the store, so I had to nix it and add a few additions. The curry came out ‘sweet and spicy’, this new recipe is for the books!

Ingredients:
2 lb beef stew meat, cut in 2 inch cubes
1 red onion, chopped
1 1/2 sweet pepper (orange, yellow or red)
2 garlic cloves, minced
1 tsp of fresh ginger, grated
1 cup diced tomatoes
1/4 cup fresh cilantro, chopped
1 tsp salt
1 tsp freshly ground black pepper
1 tsp turmeric
1 tsp cumin
1 tsp coriander
1 tsp cayenne pepper
1 tsp smoked paprika
1 tsp lemon zest
1 1/2 tsp brown sugar
1 tbsp olive oil
1 1/2 cup beef broth
2 lb white rice (long grain)


Saute red onions,1 garlic clove, and 1/2 tbs of ginger for 10 minutes with 1 tbs of olive oil. Add 1/2 tbs of all spices.

Add diced tomatoes and 1/4 fresh cilantro. Stir for 10 minutes.

Now, its time to start preparing the stew meat!

Add 1 tbs of olive oil, 1 garlic clove, 1/2 tbs of ginger and 1/2 tbs of all spices to the stew meat. Stir for 15 min, or until meat is cooked thoroughly.

Blend the red onion and spice mix for 5 min!

The mix should come out with a smooth creamy taste, when the stew meat is done cooking add the spice mix.
Add 1 tbs of lemon zest and 1 1/2 cup beef broth to the stew meat,

Add the spice and red onion mix into the stew meat. Let the stew meat boil on high for 30 minutes or on low for an hour.
Next, boil a pot of water for the white rice. Serving size is optional.

Serve beef curry with white rice and garnish with fresh cilantro.

Food Tip: Prepare your cooking vegetables either day or night before you cook. This will save more time when you get ready to prepare your next big meal.
